to save you the trouble of listing it all here in a big table it will be stated that JUST ABOUT EVERY ACCESSORY CAN BE USED AS A TRIGGER. with only one exception. audio.
Apple TV and HomePod's cannot be used as triggers. playing, pausing audio arent supported trigger types. only action types. there are a few work arounds for a couple of these. but its few and far between, so dont expect it. that being said, what you can do to trigger it with an accessory varies greatly from app to app. in the stock Home app, you can only really do it based on Off/On state. (boolean) here is a garage door so you can see what i mean.
in this context, you can see you can triger it by if the garage "opens" or "Closes". with Opens being on
or true
and Closes being off
or false
